Do not think that I will only post pictures of food now. That is not the case. However I will post pictures and recipes of some easy healthy snacks that I love. Like the Matcha Pancakes (here) and now these amazing Acai bars. I am a “snacker” I love to always have a snack with me or I am always hungry for a little snack. Therefore I explored in my kitchen with Acai Bars.
Acai is berries coming from Brazil and contains rich antioxidants as well as it stimulates concentration, energy boost and has an effect on weight-loss, anti-aging, and more. Acai is all natural and comes in powder.
The recipe on the easiest (and maybe first) Acai bars you have ever made:
1/2 cup oat flour
2 spoons almond flour
2 spoons coconut flour
2 spoons coconut oil
1 handfull paranuts (nut of your choice)
2 tablespoon Acai powder from Acai Acai
1 tablespoon hemp seeds
2 tablespoon chia seeds
2 tablespoon cacao powder
1 teaspoon pure vanilla extract
6 pitted dates
Add all the ingredients into the blender. Blend on full speed until it becomes a sticky blob. It works well when you press down with a food tamper and I used the Vitamix blender for this.
After blending, spread the mass in a baking pan and put it into the freezer. Wait till the mass is hard (which is about twenty minutes) and voila, you got your acai bars.
Tip! If you are a chocolate addict like me, I melt some chocolate and put it on top and back into the freezer for about ten minutes, and then you have acai bars with chocolate!
