I just want to wish you a merry Christmas and happy Chanukah. I will be spending my Christmas and Chanukah, which is both on the 24th December in my calendar this year, in Copenhagen. I am gathering my family and doing all the cooking myself, which is my first year hosting. To me, this seasons is about gathering people and showing love, which is why I decided to host a dinner for my close girlfriends.
The picture above is from this Tuesday where I was doing a Chrisnukah dinner for my girlfriends in Copenhagen where I was doing all the cooking. The menu was my healthy version of af Christmas and Chanukah dinner. The menu was: beetroot tart with goat cheese (the pastry made from scratch), fishcakes, chicken-cakes (frikadeller), latkes (Chanukah tradition) with sweet potato and butternut squash, green bean and edamame bean salad, red cabbage salad, kale pesto, and three different kinds of homemade bread (spelt, wheat, and paleo bread). For dessert was three different kinds of Christmas cookies. The evening was amazing and I am proud to have done my first whole dinner from scratch. #ThisWayChef
